It seems as if this is a bug in the pixel-lit shader. I have recorded as issue ticket here:

Long story short: When using the Spine/Sprite/Pixel Lit
shader, ZWrite
needs to be enabled and minimal Z Spacing set at the SkeletonAnimation
or SkeletonRenderer
component.
I will update the shader and provide some mechanisms to warn/adjust improper Z Spacing
.
